Shortbread GF/ Dairy Free

250g Plain (gluten free) flour
200g Margarine (dairy free) diced at room temperature
100g Almond Meal
60g Castor sugar
pinch of salt
2 drops vanilla essence 

Mix all ingredients together until a dough is formed, or combine all ingredients in a food processor & process until mixture resembles breadcrumbs. Finish working dough together by hand on a lightly floured board.Roll dough to approximately 1cm in thickness. Cut shape the dough then place on an ungreased baking sheet

Bake in a preheated oven 0f 180 C for 15-20 minutes

Allow to cool on the tray for approximately 5 minutes before removing with a spatula to a cooling rack.
Dust with a little castor sugar before serving
