Thanks Kun for cooking this for us - it was delicious, we just had to add it to our collection of recipes :)



Cut the eggplant into thick strips - you can peel the skin if you prefer or leave it on
Boil the eggplant until it is fully softened through

Heat a pan with oil and fry with garlic, add soy sauce and salt and sugar to taste, you can add chilli too, if you so desire
