Pineapple & Cherry Fruit Loaf PDF Print E-mail

100g Glace Pineapple - chopped
100g Glace Cherries - halved
125g Margarine
1/3 Cup (85g) Castor Sugar (or Super Fine Sugar)
2 Large Eggs (or egg replacer equivalent)
1 Cup Plain flour
1/3 Cup Self raising flour
1/3 Cup Soy Milk
1 Tbsp Sherry

For best results, soak the chopped glace pinapple and cherries in sherry prior to mixing cake, the longer you soak, the better, we like 24hrs to a week in advance, which gives the fruit enough time to absorb the sherry - yum!

Preheat Oven at 150 - 160C (depending on your oven)

Mix the margarine & sugar until combined

Add the eggs one at a time (1/2 of the egg like at a time) & blend into the sugar & margarine mixture

Mix in the fruit, 1/2 of the flour & all of the milk & sherry.

Add the remaining flour and mix well

Pour/ spread the mixture into a greased oven-proof dish & make in a moderately slow oven for approx 80 min

Cover cake & allow to cool in pan
